Preheat oven to 350 F°
Process 1 cup dates in a food processor until small bits remain
Toast oats for 10-15 minutes, until golden brow
Place oats, loosely chopped almonds and dates in a large mixing bowl
Warm 1/4 maple syrup and 1/4 peanut butter in a small saucepan over low heat
Stir and pour over oat mixture and then mix
Transfer to an 8x8-inch baking dish or other small pan lined with plastic parchment paper so they lift out easily
Press down firmly until flattened
Cover with parchment paper
Put it in the freezer for 20-30 minutes
Chop into even bars
Keep in freezer to keep them
