African Peanut Stew with Sweet Potatoes

African Peanut Stew with Sweet Potatoes
- 1 tbsp olive oil
- 1/2 medium onion (diced)
- 1 glove clove garlic (finely minced)
- 1/2 tbsp fresh minced ginger
- 1/2 tsp red chili pepper
- 200 g diced tomatoes
- 1/2 cup peanut butter
- 1 cup vegetable broth
- 1 medium sweet potato (peeled and diced)
- 1/2 can kidney or black beans (drained and rinsed)
- 1/2 cup peas (frozen)
- 1 cup spinach
- Salt and pepper
- Heat the oil in a large pot over medium heat
- Add the onion and cook until soft, about 10 minutes
- Add the garlic, ginger and chili and cook for about 5 minutes to soften
- Add the tomatoes and the peanut butter, stirring it in until smooth
- Stir in the broth and sweet potatoes
- Cover the pan and simmer until potatoes are tender, about 15 minutes
- Add the black beans, peas, spinach
- Season with salt and pepper and enjoy
