African Peanut Stew with Sweet Potatoes

  • 1 tbsp olive oil
  • 1/2 medium onion diced
  • 1 glove clove garlic finely minced
  • 1/2 tbsp fresh minced ginger
  • 1/2 tsp red chili pepper
  • 200 g diced tomatoes
  • 1/2 cup peanut butter
  • 1 cup vegetable broth
  • 1 medium sweet potato peeled and diced
  • 1/2 can kidney or black beans drained and rinsed
  • 1/2 cup peas frozen
  • 1 cup spinach
  • Salt and pepper


  • Heat the oil in a large pot over medium heat
  • Add the onion and cook until soft, about 10 minutes
  • Add the garlic, ginger and chili and cook for about 5 minutes to soften
  • Add the tomatoes and the peanut butter, stirring it in until smooth
  • Stir in the broth and sweet potatoes
  • Cover the pan and simmer until potatoes are tender, about 15 minutes
  • Add the black beans, peas, spinach
  • Season with salt and pepper and enjoy
